1. Boil the water for the noodles. Put in a handful of your favorite frozen veggies, along with any left over chopped up pieces of meat. Add noodles and fix like the package says. Sometimes I will cook up some chicken and cut it up into bite size pieces and freeze. Then I take a handful from the freezer and throw in with the veggies.

2. Cook noodles according to package directions, plus add a few dashes of chili sesame oil to the water. Add seasoning, then drain the noodles (after they are cooked). Top with a fried egg. I like to add a little soy sauce. We do this a lot for breakfast or lunch.

Also, there is a great alternative to Ramen noodles called Indomie. It is an Indonesian brand and are really good. They come with 4 seasoning packets, including oil and a soy sauce paste. They are kind of hard to find and you have to usually go to an Asian market to get them. We order a case at a time from our Asian market.

Like many of you who has a busy and hectic lifestyle, I eat too much unhealthy food, for example: instant noodles or ramen. My pantry is constantly choked full of various kinds of instant noodles: imported ramen noodle from Asia and my favorite American cup noodles. The alarming thing about eating ramen noodle is not about the noodle, but the fact that I’m addicted to the flavoring packet in every single ramen: Penang laksa, Thai tom yum, curry, miso, and so on.

Ramen noodle salad is a very simple recipe–as the name suggests, it’s a quick dish that you can whip up by combining ramen noodle + salad. I make my ramen noodle salad with shredded cabbage, mayonnaise, spicy chili sauce (you can also use Tabasco sauce) and some seasonings. A simple recipe with almost no artificial flavorings–OK, I confess, just a wee bit.

The next time if you feel bad about consuming too much instant noodle, try my ramen noodle salad recipe. It’s actually not half bad.

Ramen Noodle Salad Recipe

Ingredients:

1 pack ramen (discard the seasoning packet)

2 oz / 1 cup shredded cabbage
Some chopped scallions
3 tablespoons mayonnaise
1/4 – 1/2 teaspoon Sri Racha chili sauce or Tabasco sauce
1 teaspoon lemon juice
1/8 teaspoon Maggie seasoning (or a pinch of salt)
A pinch of sugar
1/4 teaspoon of white and black sesame seeds (toasted)

Method:

Bring water to boil and prepare the ramen noodle. Boil for about 2 minutes or until it’s cooked. Drain the water, set aside and let cool.

Transfer the ramen noodle to a bowl and toss it with the shredded cabbage, mayonnaise, and other seasonings with a salad tong. Garnish with chopped scallions and toasted sesame seeds. Serve cold.
